    Why can oil be green?

    Oil can be green because olives are harvested when they are still unripe and green. Its high chlorophyll content gives it an intense green color.

    Why is green oil more bitter and pungent than oil from ripe olives?

    Green oil contains more polyphenols, a group of chemicals related to bitterness and pungency. Depending on the state of ripeness, the polyphenol content varies: the greener the olive, the more polyphenols its oil contains and the more bitter and pungent it is. As the olive matures, the number of polyphenols in the oil is reduced.

    Is it better for an oil to have few or many polyphenols?

    Polyphenols are antioxidants which prevent the oxidation of cells. A higher number of polyphenols provides a protective layer which increases the stability of the oil, maintaining its aroma and flavor longer in comparison to an oil with fewer polyphenols.
